Spring is one of my favorite times of year. The weather is perfect outside, the dormant colors are starting to be reborn and the fresh flavors of spring are lingering on my taste buds.
I love using the grill as much as I can during the spring and being outside in general. When it comes to meals, I love making meals that are on the lighter side but still bold in flavor and packed with protein. Usually my go to meal during the spring is a salad of some sort. But, with everything, repeating the same flavors can get boring so I like to experiment and spice it up from time to time.
The latest recipe I tried spiced my salad up! I had a flank steak salad with a citrus salsa. With a busy work schedule and not coming home until after 6:30 some nights, I wanted to be able to make a meal that was quick and easy but still tasty.
To start this great dish, I took the flank steak and marinated it in some lime juice, cumin, garlic salt and a little bit of pepper. I let it sit only while the grill was heating up and while I prepped the salsa but feel free to prep this the night before to really let the flavors set in.
For the salsa, I wanted something that would be not only vibrant in taste, but also vibrant in color. I really wanted my food to reflect the mood and feelings of spring. I used the following ingredients in the salsa:
1 Serrano chili
¼ Red onion chopped
2 Roma tomatoes, chopped,
I chopped up all the ingredients and mixed them together in a bowl. I recommend really cleaning out the seeds of the chili to avoid too much heat. I left some of the seeds in and my mouth was a bit on fire. Once the salsa was all mixed, I put it in the fridge to let it marinate. Meanwhile, I threw the steak on the grill. I cooked the steak for about 3-4 minutes on each side. I like my steak medium-well.
Once the steak was done, I let it set for a few minutes on the cutting board. When it was all ready, I cut up the steak and placed it on a bed of spinach. Topped the steak with some salsa and avocado, and I was ready to eat!
I really enjoyed making and eating this meal. It was refreshing, yet I was full at the end. It focused on a lot of great flavors that worked together for one great dish. It was also easy to prep and easy to make. I will definitely be making this again and hope that you will try it too.
