Avocado Brings a Taste of Home to Valleyites



I love avocado! I love to mash it up and make it into guacamole, I love to slice it up and eat it fresh on salads and sandwiches. Heck, I’ve even been known to get a smoothie with avocado blended into it a time or two. Plus, when I eat avocado it reminds me of home and California. The avocados here are definitely not as good as in California, but they are still pretty tasty and I make it work.

Recently, one of my go-to snacks has been avocado toast. It’s easy to make, super yummy and has a lot of health benefits. Avocados are full of vitamins to help boost your immune system. They are also high in fiber and considered a “good fat” so you can eat it and feel fuller without taking in too many calories.

Besides the simplicity of this dish, one of the reasons I love to make avocado toast is because of how versatile it is. It can be as simple as toast with avocado and some hot sauce as a snack, or you can add some toppings and make it into a good breakfast or lunch. I never feel guilty after eating this as a snack because of how tasty and healthy it is.

Below are two different ways I prepare my avocado toast:

Simple toast ingredients:

-2 slices of bread

-1 mashed avocado

-Garlic salt

-Lemon juice

-Hot Sauce (I generally use sriracha!)


1). Toast the bread. While the bread is in the toaster, mix and mash the avocado with lemon juice and garlic salt to taste.

2). Spread the avocado mixture on top of the toast and top with some sriracha.

For a heartier piece of avocado toast follow this recipe:


-2 pieces of toast

-1-2 avocados, mashed

– Garlic salt

-Lemon juice

-Hot Sauce

– 2 egg of medium size

– Cherry tomatoes, sliced

-Spinach or arugula

– Bacon (optional)


1). Toast the bread. While the bread is in the toaster, cook your eggs. If you want it to be runny, cook it over easy, otherwise I prefer to cook mine over medium.

2). Mix the mashed avocado with garlic salt and lemon juice to taste.

3). When the toast is ready, spread the mashed avocado on top of the toast. Now here comes the fun part — the toppings. I usually start by adding some arugula, then the tomatoes followed by the egg. I put a few pieces of bacon crumble on top and finish it off with a drizzle of hot sauce.

4). Dig in and enjoy!

This dish is tasty, reminds me summer and is healthy for you. It is perfect to make because it does not involve a lot of cooking so it won’t heat up the house. In addition, it is super fast and easy to make so you can get a hearty and healthy meal in a pinch.
